Growing up, Fleur de Sel was always a staple in our home thanks to my French mother. It was the salt we reached for at the table and the finishing touch that brought simple ingredients to life.
Meaning "flower of salt", Fleur de Sel forms naturally on hot days as seawater evaporates. Delicate pyramid shaped crystals rise to the surface of the salt pans like tiny flowers and are carefully harvested by hand. Prized for its light texture and clean flavour, it's considered one of the world's finest finishing salts.
I've combined Fleur de Sel with dehydrated lime and Scotch bonnet chilli to create a finishing salt that delivers brightness, balance and a gentle warmth. The citrus notes of lime complement the fruity character of Scotch bonnets, while the delicate salt crystals create a clean, mouth watering finish that keeps you coming back for more.
Sprinkle over grilled fish, roast vegetables, eggs, avocado, salads, fries or perfect for a spicy margaritas.
